Saypan Kilangu Roast(Eddo Roast).

This dish goes perfectly with hot saambhar rice.








Ingredients:-

Saypan kilangu- 10.
Mustard(kadugu) - 1/2 tsp.
Urad dal - 1/2 tsp.
Cumin - 1/2tsp.
Onion - 1.(finely chopped).
Tomato -1/2.(finely chopped).
Curry leafs(karuvay pilai) - 10.
Chili powder - 1 tsp.
Turmeric powder - 1/2 tsp.
Salt- 1 tsp(according to taste).
Oil- 5 tsp.

preparation:-
1. Clean the saypankilangu, remove its skin& wash thoroughly in water.
2. Pressure cook the saypankilangu for 1 whistle with half cup of water.
3. Take them out & drain it.
4. In a pan ,add oil,mustard,urad dal,curry leafs&let it splutter.
5. Add onions,tomato,saute well.
6. Add the spice powders ,sprinkle some water &let it cook until oil comes on top.
7. Now add the boiled saypangilangu & stir it lightly,keep in sim for 2 mins.
8.Hot & spicy saypankilangu is ready to taste.

Chili Paneer.


Ingredients:-


Paneer - 1 cup(cube cuts).
Onion - 1cup(cube cuts).
Tomato-1/2.
Garlic Cloves - 2(cube cuts)(optional).
Green Chili-10.(finely chopped).
Capsicum(red/yellow/green-mixed)-1 cup.(cube cuts).
Spring Onions - 3 tsp.(finely chopped)
Pure Red Chili Powder -1 tsp.
Oil - For Frying.
Soy Sauce - 2 tsp.
Salt - 1 tsp(according to taste).

For Marination:-
Corn Flour- 2tsp.
Maida -1 tsp.
Soy Sauce - 1 1/2 tsp.
Chili Powder -1/4 tsp.(optional).
Water - 2 tsp.


Preparation:-

1.In a bowl,marinade the cubed paneer with the ingredients required for marination & let it marinade for 1/2 an hour.
2.Deep fry the paneer cubes in oil & drain them in paper towel.keep it aside.





3.Put 5tsp of oil in a kadai,add onion fry till its brown/add garlic.
4.Add the tomato/capsicum/green chilies/2 tsp water &let it cook for 5 minutes.

5.Now add the chili powder/soy sauce/salt/saute until everything is well fried.
5.Now add the paneer cubes/stir it/garnish with spring onions & Enjoy.

Note:-

1.you don't need to fry the Paneer.If you are diet conscious,put the plain paneer in the masala stuff.but it takes a little longtime to cook.
2.Add salt after adding soy sauce/It is little salty.so add less salt.

Crunchy Potato Fry.

Ingredients:-

Potato - 1 big.
Chili powder - 1&1/2 tsp.
Turmeric powder - 1/4 tsp.
Coriander powder - 1/2 tsp(optional).
Salt - 1/2 tsp.Oil - 5 tsp.
Curry Leaves - 10(optional).


Preparation:-

1.Dice the potatoes,cook it in a steamer or pressure cooker until it is soft & fully cooked
2.Heat 3 tsp of oil in a kadai,let it heat.Keep the gas in low flame.
3.Now add the Chili powder & Turmeric powder/Coriander powder & salt.
4.Add the Curry Leaves & fry it for few seconds.Now add the diced Potatoes.
5.Stir it well till the Spices are well coated on the Potatoes/add the remaining oil.
6.Let it cook until its crispy & brown.serve hot.

Sutta Katharikai.(Broiled Stuffed Brinjal)

This wonderful dish is popularly known as "Sutta Katharikkai" in Tamilnadu.(South India).Its a Famous & Tasty Dish in Villages.Curd rice is the perfect combination to eat with these stuffed Eggplants.You can do these in grill to reduce the cooking time.


Ingredients:-

Bringal - 2.
Chili powder - 1 tsp.
Coriander powder - 1 tsp.
Turmeric powder - 1/2 tsp.
Cumin powder - 1/2 tsp.
Salt - 1/2 tsp.(according to taste).
Tamarind juice - 2 tsp.(optional).
Water - 3 tsp.
Oil - 5 tsp.

Preparation:-
1. Wash the brinjal in cold water & make straight slits in it.
2.Mix all ingredients except oil with water.It should be a thick paste.
3.Stuff the paste inside & all over the brinjals/Let it marinade for 1/2 an hour.
4.Heat 5 tsp of oil in a pan & Place the brinjal.Close it with a lid if possible.
5.Keep the heat in low flame/Leave it for 1/2 an hour.
6.Turn the brinjals every 10 minutes.Serve it with Hot sauce / Ketchup.

Sweet & Sour Bringal.

(Kathirika Thalicha).

An excellent & popular sidedish goes well with Biriyani.




Ingredients:-

Oil - 5 tsp.
Mustard Seeds - 1/2 tsp.
Urad Dal - 1/2 tsp.
Curry leaves - 15.
Onion - 1(Finely chopped).
Tomato - 1(Finely chopped).
Bringal - 5(Lengthwise cuts).
Chili Powder - 1 tsp.
Coriander Powder - 1 tsp.
Turmeric Powder - 1/2 tsp.
Tamarind Paste - 3 tsp.
Sesame Seeds - 2 1/2 tsp.
Fenugreek Seeds(venthayam) - 1 tsp.
Crushed Jaggery - 1 1/2 tsp.
Coriander Leaves - 10.

Preparation:-

1.Dry roast the fenugreek seeds and sesame seeds separately.
2.Grind them together to a dry coarse mixture without adding any water.
3.In a pan,add 5 tsp of oil/add mustard seeds/let them splutter.
4.Now add urad dal/curry leaves/onions/fry it till golden brown.
5.Add the tomatoes /bringal pieces with little water/fry it well.
6.Now add(chili/turmeric/coriander) powders/stir fry it till oil comes out.
7.Add the tamarind paste and fry until the raw smell goes out.
8.Now stir in the coarse powder of fenugreek/sesame seeds and simmer it for 5 minutes.
9.Turn off the gas and add the crushed jaggery on top.
10.Garnish with coriander leaves and serve hot with Biriyani.

Carrot Beans (stir fry)Poriyal.



Ingredients:-

Carrot - 2 (chopped into cubes).
Beans - 10(chopped into cubes).
Green chili - 3 (slit ed lengthwise).
Onion - 1/2 cup(finely chopped).
Moong daal - 5tsp.(soak in water in 10 min's).


For Tempering:-

Oil - 1tsp.
Mustard seeds - 1/2tsp.
Urad dal - 1/2tsp.
Curry leaves - 7.
Shredded coconut - 2tsp.


Preparation:-

1.Mix the chopped carrot/beans/onion/green chili/moong daal
together well.
2.Place the mixture in idly plate and keep it inside the idly maker for 15 minutes.
3.Or use a pressure cooker and put the mixture inside it/cook it for 15 min's without
fixing the visil.
4.Take the mixture and set it aside.
5.In a pan,heat 1 tsp of oil,add mustard seeds/urad dal/curryleaves/add the veg.mixture in it.
6.Turn off the stove/garnish with coconut/serve hot.

Coriander Chutney .


This tasty chutney is my all time favourite with hot Idlis & Dosas.



Ingredients:-

Coriander leafs - 1 bunch.
Grated coconut - 3 tsp.
Urad dal - 1tsp.
Red chili - 3. (according to taste).
Vadavam-1 tsp.(optional).
Salt -to taste.

For Frying:-

Oil - 1 tsp.
Mustard - 1/2 tsp.
Urad dal - 1/2 tsp.
Curry leafs - 1/2 tsp.

Preparation:-

1. Heat oil in a pan,saute the urad dal,vadavam,red chili,coriander leafs one by one separately.

2. Now add everything in the mixie along with coconut & salt,grind everything.

3. Add oil in a pan,add mustard & let it splutter,add urad dal,curryleafs,add it to the chutney.
4. Its ready to serve with Idli.
Chinese Vegetable Fried Rice



Ingredients:-
sesame oil or canola oil - 5 tsp.
soy sauce - 1 tsp.onion - 1/2 cup.(lengthwise cuts)
bell peppers(capsicum) - 1/2 cup(lengthwise cuts).
carrots,beans,cabbage - 1 cup(lengthwise cuts).
aginomoto - a pinch.(optional).
boiled basmathi rice - 3 cups.
salt - 1tsp.(according to taste).
any chinese sauce (hunan/kungpao/hoisin sauce) - 1 tsp(optional).
green onions(spring onions) - 3 tsp.

Preparation:-
1. Put 3 tsp of oil in a kadai or vok,add onions ,bell peppers & stir fry it until its brown.

2. Add all the veggies one by one & fry them until they r well cooked by sprinkling water.

3. Now add boiled basmathi rice to the veggies.

4. Add soy sauce,chinese sauce,salt,pepper,aginomoto.

5. Stir it without mashing the rice.
6.Garnish with green onions & serve hot.
Spicy Chicken Kurma.

This tasty chicken kurma is a spicy side dish for parothas,chapathis,pulao.




Ingredients:-
Oil - 1/2 cup.
Cinnamon(pattai) - 3.
Cloves (kirambhu)- 3.
Cardamom(yelakkai) - 2.
Bay leaf(biriyani elai) - 2.
Nutmeg(jaathikaai) - 1.
Onion(finely chopped lengthwise) - 1 cup.
Tomato (finely chopped) - 1 cup.
Green chili - 3.
Coriander leaves- 1/2 bunch.
Curry leaves- 10.
Chicken (with bone) - 1 kg.
Coconut milk(fresh) - 1/2 cup.

Spice Powders:-

Chili Powder - 1 tsp.
Coriander powder - 1 1/2 tsp.
Turmeric powder - 1/2 tsp.
Cumin powder - 1/2 tsp.
Pepper powder - 1 tsp.

Preparation:-

1.Pour 10 tsp of oil in a kadai,keep on medium heat.Add the masala items first.

2.Add the onions & fry it till brown.

3.Add the chillies,curry leaves,tomatoes & fry it till the oil comes out.

4.Add the chicken & stir it ,close the lid for 5 minutes.

5.Add all the spice powders and add 1/2 cup of water & close it until the chicken is well cooked.

6.After that add the coconut milk,remaining oil,coriander leaves.close the lid for 10 minutes.

7.Delicious spicy chicken kurma is ready to serve.

This wonderful mouth watering recipe is the best way to impress your guests & make their tummy to say yummy..

Ingredients:-

Chicken-1/2 kilo.(leg pieces are preferable).
Oil - 10tsp.
Ginger Garlic Paste - 2 tsp.
Onion - 2 cup(finely chopped).
Tomato - 1 & 1/2 cup(finely chopped).
Green chili - 5(slitted).

Masala:-
Cinnamon(pattai) - 2.
Cloves (lavangam) - 3.
Cardamom(yelakkai) - 2.
Bay leaf (biriyani elai) - 2.
Star anise - 1.(optional).
Nutmeg(jaathikaai) - 2.(optional).

Spices:-
Chili powder - 1 tsp.
Turmeric powder - 1/2 tsp.
Coriander powder - 2 tsp.
Pepper powder - 2 tsp.
Cumin powder - 1tsp.
Salt - 1 tsp.

Garnish:-
Coriander leaves - 1/2 bunch.

Preparation:-
1.In a kadai pour 5tsp of oil ,Add all the Masala item & Let it Splutter.
2.Now Add the Onions and fry it till brown.
3.Add the Ginger Garlic Paste fry it till the oil comes out.
4.Add the Tomatoes/Green Chili's & let it cook for 2 minutes.
5.Add the Chicken & Turmeric Powder /remaining oil& let it cook for another 2 minutes.
6.Now Add all the Spices one by one, add a cup of Water/Stir well.
7.Keep in medium heat for 20 minutes until the chicken is well cooked & thicken.
8.Garnish with Coriander & Curry leaves/Serve Hot.

Hot & Spicy Chinese Chicken.

A quick & simple but a tasty dish.I always keep this in my menu for my Guests.It takes no time to make this special chicken variety.

Ingredients:-

Chicken (boneless) - 1/2 kg.
Chili Sauce - 1 1 /2 tsp.
Soy Sauce - 1 tsp.
Oyster Sauce - 1 1/2 tsp.(optional).
Rice Vinegar - 1tsp.
Lemon Juice - 1 tsp.
Corn Flour - 2 tsp.
Maida - 2 tsp.

For cleaning the Chicken:-
Curd - 1/4 cup.
Turmeric - 1/2 tsp.

Preparation:-

1.Wash the chicken with water.
2.Then marinade it in curd & Turmeric powder for 5 minutes.
3.Rinse it again in water.Now the chicken is ready.
4.Put all ingredients in a big bowl & mix well with a fork.
5.Add the chicken in that mixture & marinade it for an hour.
6.Heat oil in pan & Deep fry the chicken.
7. drain them in paper towel.

8.Hot & Spicy Chinese Chicken is ready to bite.

Shark Stir Fry .

Suraa Puttu.


Ingredients:-

Shark fish - 3 pieces.
Oil - 5 tsp.
Mustard seeds - 1/4 tsp.
Urad dal - 1/2 tsp.
Curry leaves - 20.
Chopped garlic - 10(cubed).
Chopped green chili - 10(according to your spice level).
Onion - 1(finely chopped).
Shredded coconut - 1/2 cup.
Turmeric powder - 1/2 tsp.

preparation:-

1. Steam the fish with 1 cup of water in a pressure cooker for 1 visil.

2. Or in a pan, pour 1 cup of water /add the fish /pouch or boil it until its well cooked.it takes about 5 to 8 minutes.

3.Now take the cooked fish and squeeze the water out of it completely by pressing it with your hands/remove its skin and shred the fish (like shredded coconut) with your hands or with a fork./keep it aside.

4.In a pan,pour 5tsp of oil,let it heat/add mustard seeds/let it splutter.

5.Now add the urad dal,green chilies,curry leaves/fry it.

6.Add cubed garlic & onions /fry it till golden brown.

7.Add the shredded fish/turmeric powder/stir it/simmer for 5 minutes.

8.Turn off the gas/add the shredded coconut /mix it well with the shark mixture.

9.Ready to serve and goes well with Rasam rice.

Kung Pao Chicken (Chinese).

Ingredients:-

Chicken - 1/2kg(boneless).
Onion - 1 (diced).
Ginger - 2tsp.
Bell pepper(capsicum) - 1(diced).
Red chili - 7 to 8(According to spice level).
Cucumber - 1 (diced)
Spring(green)onion - 1 (diced).
Peanuts - 5tsp.
Soy sauce - 2tsp.
Oil - For frying.
Corn flour - 3 tsp.
Salt - to taste.

To prepare the sauce:-

(mix everything together)

Vinegar(rice wine) - 3 tsp.
Corn starch - 1 tsp.
Soy sauce - 2 tsp.
Sesame oil - 3 tsp.


Preparation:-

1.In a bowl,combine chicken with soy sauce,salt,cornflour/mix well.
2.Keep the marination for 1/2 an hour.
3.In a large wok or kadai,pour 5tsp of oil/put the marinated chicken/stir fry it
4.Drain that in a paper towel/keep it aside.
5.In that wok add 3 tsp of oil,add ginger/red chili/onion/cucumber/fry it well.
6.Add the capsicum/salt/chicken/and the sauce.
7.Stir fry it and let it simmer for 5 minutes.
8.Turn off the stove & stir in the peanuts/green onion.
9.Serve hot & enjoy with white rice.

Vegetable Kichadi.




Ingredients:-

Oil - 3 tsp.
Cinnamon(pattai) - 2.
Cloves(lavangam) - 2.
Bay Leaves(biriyani elai) - 1.
Curry Leaves - 10.
Onion - 1(lengthwise cuts).
Green Chillies - 10.
Ginger garlic paste - 1 tsp.
Vermicelli ( semiya) - 1 1/2 cup.
Water - 3 cups.

Mixed Vegetables(peas,beans,carrot,chow chow,beetroot,potato) - 1 cup.

Preparation:-


1. Put oil in a kadai ,add the masala &let it splutter.


2. Add the onions,green chillies,till it brown.


3. Add the ginger garlic paste,curry leaves,boiled vegetables.stir it.


4. Add the water now & bring it to boil.

5. Fry the vermicelli in a dry pan for a minute.

6. Add the vermicelli to the boiling water & stir it until its well cooked.

7. If water is not enough,just sprinkle some more until its well done.

8. Serve it Hot with Coconut Chutney & Enjoy.


Note:-

1.We can do the same dish by using(shredded) idiyappam instead of vermicelli.

2.To make this dish simple,add boiled mixed vegetables.

3.For extra taste,you can add shrimp or prawn.it goes well along with it.

Onion Idiyappam .

Ingredients:-

Oil or ghee - 3 tsp.

Mustard - 1/2 tsp.

Urad dal - 1/2 tsp.

Curry leaves - 10.

Channa dal(kadalai paruppu) - 1 1/2 tsp.

Onion- 1.(lengthwise cut).

Green chillies - 10.(according to taste).

Coconut(shredded) - 1/2 cup.

Cashew nuts - 10.

Idiyappam (shredded) - 2 cup.


Preparation:-

1. Put oil in a kadai &let it heat,add mustard & let it splutter.

2. Add urad dal,channa dal,curry leaves,cashews,green chillies & stir fry them.

3.Add the onions & fry till it becomes golden brown.

4.Now add the idiyappam & shredded coconut & stir them for 1 minute.

5.Yummy Idiyappam is ready,serve hot with coconut chutney.

Javarasi Upma(Sago Stir Fry).

Believe it or not,This sago stir fry tastes like Heaven.I don't like the taste of curd,But when i tried this ,its yummy,The soft crunchy sago melts in our mouth in each & every bite.
It don't need any side dish to eat with it.I Bite this with a couple of murukku.I hope you will also try this & Enjoy.


Ingredients:-

Oil - 2 tsp.
Mustard Seeds (kadugu) - 1/2 tsp.
Urad Dal(ulutham paruppu) - 1/2 tsp.
Channa Dal(kadalai paruppu) - 1 tsp.
Javarisi (sago)- 1 cup.
Thick Curd - 1 cup.
Moong Daal(paasi/payitham paruppu) - 1/2 cup.
Shredded Coconut - 1/2 cup.
Onion - 3/4 cup(chopped).
Green Chili - 4(slitted).
Curry Leaves - 10.

Preparation:-
1.Soak Javarisi(sago) in 1 cup of Thick Curd for about 1 hour till the curd gets completely absorbed by the sago.

2.Pressure cook the Moong Daal for 2 visils.Keep it aside.

3.In a pan,pour 2 tsp of oil &Let it heat.

4.Add the mustard seeds/urad dal/channa dal/curry leaves.

5.Add the green chili's/onion & Fry it till golden brown.

6.Add the sago & Fry it/add the moong dal/stir well for a minute.

7.Turn off the gas,sprinkle the shredded coconut , stir it & serve.

This rice is very tasty & suitable for all festival occasions. Along with the Vegetable Kurma it tastes delicious.

Ingredients for Puloav.

1.basmathi Rice - 1 cup(washed).
2.onion - 1.
3.Green chili - 10(according to taste).
4.Garlic flakes - 15.
5.Cashew nuts - 25.
6.Cloves(lavangam) - 2.
7.Cardamom - 2 (optional).
8.Star anise - 1 (optional).
9.Cinnamon(pattai) - 2.
10.Bay leaf(biriyani elai) - 1.
11.Nut mug(jaathikai) - 1/2(optional).
12.Ginger/garlic paste - 1 1/2 tsp.
13.Oil-5tsp.
14.Coconut milk - 1 cup.
15.Water - 1 cup.

Preparation:-
1.Turn on the gas to medium high flame.place a cooker,pour oil & let it heat .

2. Add the cloves/cinnamon/bay leaf /star anise /nut mug/cardamom & saute.
3.Add garlic flakes ,onions ,green chili, ginger garlic paste,saute until its golden brown.
4.Add the cashew nuts & pour the water & coconut milk,mix everything together.
5.Now add the rice(no need to soak the rice/just washed is enough) & salt.stir it lightly.

6.Put the lid & keep it for 1 whistle.puloa is ready to serve.





Chinese Vegetable Fried Rice



Ingredients:-

Cauliflower Manchurian.
This yummy recipe always makes my tummy happy.The Manchurian & Fried rice are the best combinations i ever had.



Ingredients :-

Marination:-
Cauliflower-1.
Corn Flour-1 cup.
Maida Flour-2 tsp.
Soy Sauce-3 tsp.
Red food color- a pinch (mixed with water).
Chili powder-3 tsp.(according to taste).
Salt-2 tsp.
Ginger Garlic Paste-1 1/2 tsp.
Rice Flour-1 tsp.(optional).



For Garnish:-
oil-4 tsp.
Red Onion-1(cube cut).
Green Bell Pepper(capsicum)-1(cube cut).
Garlic-10 .
Soy Sauce-2tsp.
Preparation:-1.wash the florets & put it in hot water for 1 minute.
2. Drain them & put all the ingredients for marination one by one and marinade it for 2 hours.

3.Then deep fry them in oil.

4.In a large skillet,pour oil,add onions(cube cuts)/bell peppers/garlic.

5.saute for a minute & pour the soy sauce & stir it.turn off the gas.

6.now add the fried cauliflower florets & stir ,serve hot with tomato ketchup.

I enjoyed it every rainy season along with a hot cup of Tea. A perfect evening snack.


Ingredients:-
Veggies(carrot/cauliflower/beans/potato/onion/cabbage/chow chow/capsicum) - 3 cups .(lengthwise cuts).
Besan Flour(kadala maavu) - 5 tsp.
Rice Flour - 2 tsp.
Corn Flour - 2 tsp.
Maida Flour - 2 tsp.
Chili Powder - 1 1/2 tsp.
Turmeric Powder - 1/2 tsp.(optional).
Salt - 1 tsp.(according to taste).
Ginger Garlic Paste - 1/2 tsp.(optional).
Green Chillies (slitted) - 4.
Coriander Leaves - 1/2 cup.


Preparation:-

1. Mix all the powder ingredients together by adding 10 tsp of water .the batter should be a thick paste.

2. Add the veggies now,mix well& let it marinade for 1/2 an hour.
3. Heat oil in a kadai & deep fry them by pouring them into the oil using a spoon.


4. dry them in paper towel.

5. Serve hot with Ketchup & Coconut Chutney.Enjoy.

Ingredients:-
Red food colour - 1 pinch.
Garam masala - 1 tsp.
Chili powder - 1 1/2 tsp.
Coriander powder - 1/4 tsp.
Cumin powder - 1/4 tsp.
Corn flour - 5 tsp.
Maida flour - 2 tsp.
Rice flour - 1/2 tsp(optional).
Ginger garlic paste - 1 tsp.
White bread - 1 packet.
Oil - for frying.

For Garnishing:-
Green onions(spring onions) - 4tsp (fine cut).
Coriander leaves - 2 tsp(fine cut).
Onions - 2 tsp(fine cut).
Lemon - 1/2.

Preparation:-
1. Cut the breads into small square pieces(no need to cut the sides)keep it aside.
2. Put all the ingredients except oil & bread pieces.

3.Mix well together to make a thick batter like(vaalakai/plantain bajji batter).

4.Keep the oil in medium high & let it ready.

5.Dip the bread pieces in the batter one by one& deep fry them in oil.
6.Dry them in paper towel & garnish with onions,lemon.

7.Spicy Bread 65 is ready to dig in,Enjoy.

Rava Vadai.

A tasty evening snack which attracts everyone to come & taste it immediately.when i tried this for the first time.Am not able to get a single vadai atlast.They kept the empty bowl in front of me. After that,i always keep some of them for me inside my cupboard.


Ingredients:-
Rava - 1 cup.
Curd - 1 cup.
Rice flour - 1 tsp.
Channa Daal(kadalai paruppu) - 1 1/2 tsp.
Thoor Dal(thuvaram paruppu) - 1 1/2tsp.
Urad Dal(ulutham paruppu) - 1 1/2 tsp.
Shredded Coconut - 1/4 cup.
Green Chilies - 2 to 4(finely chopped).
Asoeftida(perungayam) - 1/4 tsp.
Salt - to taste.
Oil - for deep frying.
Curry Leaves - 6.
Coriander Leaves - 2 tsp.


Preparation:-

1.Soak Rava & Riceflour in Curd for 1 hour.
2.Soak all the Daals for 1/2 an hour separately.
3.Take a bowl,put the rava mixture & the soaked daals together with the rest of the
ingredients except oil.
4.Mix well & It will look like vadai batter.
5.Keep oil in kadai & Make vadai & Put it in the hot oil.
6.Deep fry them & drain in Paper Towels.

7.Serve them with Coconut Chutney & Ketchup.

Spinach vadai(keerai vadai).

Vadai is always special in Tamilnadu.An easy and Tasty snack ,Especially this Spinach Vada is great for Kids and Those who doesn't like Spinach.


Ingredients:-

Urad dal - 1/4 cup.Channa dal - 1 cup.
Rice - 3 tsp.
Red Chili's - 5 to 6.
Cumin Seeds (Nacheeragam) - 2 tsp.
Spinach - 1 bunch(finely chopped).
Onion - 1 (medium size / finely chopped).
Coriander Leaves - 1/2 bunch.
Grated Paneer - 1/4 cup (optional).
Sea Salt - To Taste.
Oil - For deep Frying.

Preparation:-

1.Mix dal & rice together and soak it for 1 hour.
2.Drain the water completely & Add all the dals to the Food processor along with the red chili's.
3.Grind them coarsely and put in a bowl.
4.Now add grated paneer,chopped spinach/onion/cumin seeds/coriander leaves
5.Mix well and make it in in vadai shape or in whatever shape you needed.
6.Don't add water to the mixture,because spinach and onion has more water to blend in the mixture.
7.Heat the oil & deep fry the vadai.
8.Serve hot with coconut chutney or Ketchup.



Note:-

1.You can add soy paneer(Tofu) instead of paneer.
2.If you want to keep the batter in fridge,cover them airtight.Also drain the excess water in it while making vadai.

Urad Daal Bonda.

A traditional south indian appetizer for all festival occasions in tamilnadu.



Ingredients:-

Urad dal - 1 cup (soaked in water for 1 hour).
Crushed pepper - 1 tsp.
Whole pepper - 1 1/2tsp.
Coconut(raw) - 6 tsp(diced into 1/2" pieces)
Salt - to taste.
Curryleaves - 15.
Oil - for deep frying.


Preparation:-

1.Drain the soaked urad dal completely and grind it to a fine paste
2.Take a bowl,add the urad dal paste,pepper,salt,coconut,curryleaves,crushed pepper.
3.Mix everything well.heat oil in a pan.
4.Make small balls with the batter and pour it in the hot oil.
5.Deep fry them and drain them in a paper towel.
6.Serve hot with coconut chutney.enjoy.

Rava Adai.

A crispy and yummy evening snack will be ready in no time.




Ingredients:-

Rava - 1 cup.
Maida - 2 tsp.
Riceflour - 1/4 cup.
Green chilies - 5(finely chopped).
Onion - 1(finely chopped)
pepper - 2tsp(crushed).
Coriander leaves - 1/2 bunch(finely chopped)
Salt - to taste.
Oil - for deep frying.

For Tempering:-

Oil - 2tsp.
Mustard seeds - 1/4tsp.
Urad daal - 1/2tsp.
Curryleaves - 10.
Cumin - 1tsp.


Preparation:-

1.Mix all ingredients(except oil) together with 1 1/2 to 2 cups of water.
it should be like thick idly batter without lumps.

2.Keep it aside for half an hour.
3.Now take a pan,pour 2 tsp of oil,
season it with mustard/uradaal/curry leaves/cumin.
4.Fry well,add it to the thick batter/stir it well.
5.Heat oil in a kadai,and pour the batter with a deep spatula,
pour one adai at a time.
6.Fry it well and drain it well in a paper towel.serve hot.

Semiya tava cutlet.
Vermicelli Cutlet.
A simple and healthy snack with less oil and great for weight watchers.
Ingredients:-
semiya(vermicelli) -1 cup.
Thick curd - 1cup.
Rice flour - 1/2 cup.
Onion -1 (finely chopped).
Green chili -2(finely chopped).
Chili powder – 1tsp.
Salt – to taste.
Coriander leaves – 1/2bunch(finely chopped)
Curry leaves – 10.
Oil – 5tsp.
Preparation:-
1. Heat a pan, add the semiya (vermicelli) & fry it lightly without adding water.
2. Now soak the vermicelli in curd for ½ an hour without adding any water.
3. The curd should be in room temperature.

4. After ½ an hour add all other ingredients in to the soaked vermicelli mixture except oil.
5. Mix well and make patties.

6. Pour a tsp of oil, spread the patties in tava.
7. Flip it and pour a tsp of oil, shallow fry it and serve it with ketchup.

2.Take a bowl,add the urad dal paste,salt,onion,curry leaves,chili,asafoetida.
3.Mix everything well,heat oil in a pan.
4.Make small balls with the batter and press it with your hand into vadai shape.
5.Pour it in the hot oil.
5.Deep fry them and drain them in a paper towel.
6.Serve hot with coconut chutney.enjoy.

Bird's Nest
A wonderful tasty snack for birthday parties.This beautiful dish is an all time favourite around kids.A perfect special delight for someone special.try it.enjoy it.




Ingredients:-

Potato - 2 (boiled).
Onion - 5 tsp(finely chopped).
Green chilies - 4(finely chopped).
Coriander leaves - 5 tsp(chopped).
Curry leaves - 5(chopped).
Cumin - 1/2tsp.
Fennel seeds- 1/2 tsp.
Cumin powder- 1/2 tsp(optional).
Garlic - 1(finely chopped).
Lemon juice - 1/2tsp.
Fresh green peas - 1/2 cup.

For coating :-

Roasted wheat vermicelli - 1/2 cup.
Maida or all purpose flour - 1/4 cup.
Water-1/2cup.








Preparation:-
Step -1.

1.Boil the potato in a cooker,drain them without water,mash them well.
2.In a pan,add 3tsp of oil,mustard,cumin,fennel seeds,let it splutter.
3.Add curry leaves,green chilies,onion,fry them till golden brown.
4.Add garlic,cumin powder and the potatoes,Coriander leaves,mix everything well.
5.Now stir in the lemon juice and turn off the gas.
6.let it cool for 15 minutes and make round shaped balls out of the potato mixture.
7.Then flatten them like patties,and make with your thumb and keep aside.

step-2.

1.In a bowl mix water and all purpose flour to thin batter.
2.In a plate,spread the vermicelli.
3.Heat oil in a frying pan,dip the patties into the flour batter,then press them in the vermicelli.
4.Deep fry them in hot oil and drain them in paper towel.
5.While serving,take 3 to 4 green peas and place them in the center of the potato nest and serve.
6.Enjoy it with tomato ketchup.

Note:-
1.you can serve the nest filled with peanuts for the real bird's nest effect.
2.you can use rice sticks instead of vermicelli.
